- 3 large eggs
- ½ Tbsp sugar (up to 1 Tbsp for extra sweetness)
- 1 tsp light soy sauce
- 1 Tbsp water (optional; for fluffiness)
- 1 Tbsp neutral oil
Instructions
- In a mixing bowl, whisk together eggs, sugar, soy sauce, and optional water until frothy.
- Heat a tamagoyaki pan or carbon steel frying pan over medium heat and coat with oil.
- Pour a small amount of egg mixture into the pan, allowing it to cover the base.
- Cook until slightly set but soft on top; then roll towards one side of the pan.
- Repeat by adding more egg mixture and rolling until fully cooked.
- Let cool slightly before slicing and serve warm or at room temperature.
