- 2 ½ cups all-purpose flour

- ½ cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 cup apple cider, reduced to ¼ cup
- ½ cup whole milk
- 3 cups powdered sugar
- ¼ cup reduced apple cider
- 1 tsp vanilla extract
- Pinch of salt
- ½ cup store-bought caramel sauce (or homemade if you prefer)
- Pinch of flaky sea salt (optional)
Instructions
- 1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- 2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- 3. Cream butter and brown sugar until fluffy; add egg and reduced apple cider.
- 4. Gradually mix in dry ingredients until combined.
- 5. Drop spoonfuls of dough onto prepared sheets and bake for about 10 minutes.
- 6. Allow cookies to cool before preparing the filling by beating together butter, powdered sugar, milk, reduced apple cider, and salt until smooth.
- 7. Assemble by spreading caramel filling between two cookies.
