Instructions

- In another bowl, combine egg, milk, melted butter, and vanilla extract until well mixed.
- Pour wet ingredients into dry ingredients and gently fold until just combined; it's okay if lumps remain.
- Fold in the diced apples until evenly distributed.
- Let the batter rest for 5-10 minutes to enhance fluffiness.
- Heat a lightly oiled griddle over medium heat.
- Pour ¼ cup of batter onto the griddle for each pancake; leave space to spread.
- Cook for about 2-3 minutes until bubbles form on top; flip and cook another 2-3 minutes until golden brown.
