Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until fully combined.
- In another bowl, whisk together all-purpose flour, baking soda, and salt; gradually add to the wet mixture.
- For the cheesecake filling, beat softened cream cheese until smooth, then fold in diced apples and cinnamon.
- Drop spoonfuls of cookie dough onto a lined baking sheet; make an indentation in each cookie and fill with cheesecake mixture.
- Bake for 12–15 minutes or until golden brown at the edges.
- Allow cooling before serving.
