  • 1 cup walnuts, chopped
  • 1 cup dried cranberries
  • 1 cup golden raisins
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 4 large eggs
  • ½ cup apple juice
  • ¼ cup orange juice
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • ½ cup milk
  • ¼ cup apricot jam
  • 2 tablespoons water

Instructions

  1. Preheat oven to 325°F (165°C). Grease a 9×5 inch baking pan or line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream butter and brown sugar until fluffy. Add eggs one at a time.
  4. Mix in vanilla extract, apple juice, orange juice, honey, and milk until combined.
  5. Gradually fold in dry ingredients followed by chopped fruits and nuts.
  6. Pour batter into prepared pan; bake for about 50-60 minutes or until a toothpick comes out clean.
  7. Cool for 15 minutes in the pan before transferring to a wire rack. Brush with warmed apricot jam mixed with water for glazing.
