  • Total Time: 1 hour 30 minutes
  • Yield: Serves approximately 4 people 1x

Ingredients

Scale
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 2 tablespoons oil (vegetable or mustard)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1.5 lbs beef chuck or stewing beef, cut into bite-sized pieces
  • 1 large tomato, pureed
  • 1 cup beef broth or water
  • 1 tablespoon tomato paste
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon sugar (optional, balances acidity)
  • 2 tablespoons chopped fresh cilantro (for garnish)

Instructions

  1. In a small bowl, mix ground coriander, cumin, turmeric, paprika, chili powder, and garam masala to create the spice mix.
  2. Heat oil in a large deep pan over medium heat. Sauté onions until golden brown (about 10 minutes). Add garlic, ginger, and dried red chilies; stir for another minute until fragrant.
  3. Increase heat to medium-high and add the beef chunks. Sear until browned (about 5-7 minutes).
  4. Sprinkle the spice mix over the beef; stir well for about 30 seconds to toast the spices.
  5. Add pureed tomato, salt, black pepper, and vinegar; cook for about 5 minutes.
  6. Pour in beef broth or water, bring to a boil. Reduce heat and let it simmer gently for 60-75 minutes until beef is tender.
  7. Adjust seasoning as needed before serving hot with rice or naan.
