- 4 thick cod fillets
- 2 tablespoons olive oil
- 1 medium onion
- 2 cloves garlic
- 1 tablespoon ginger
- 1 can full-fat coconut milk
- 3 tablespoons freshly squeezed lemon juice
- 1 teaspoon lemon zest
- Salt
- Pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, heat olive oil. Add chopped onion and sauté until translucent (about 5 minutes). Mix in minced garlic and grated ginger; cook for an additional minute.
- Stir in full-fat coconut milk, lemon juice, lemon zest, salt, and pepper into the skillet. Mix well.
- Transfer seasoned cod fillets into an oven-safe dish and pour the sauce over them to coat.
- Bake for about 25 minutes or until the fish flakes easily with a fork.
