Ingredients
- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika (optional)
- 1/3 cup plain Greek yogurt
- 2 tablespoons mayonnaise (optional)
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
- 1 teaspoon Dijon mustard
- 1 small garlic clove, minced (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat cod fillets dry, brush with olive oil, and season with salt, pepper, garlic powder, and paprika.
- Place seasoned fillets on the prepared baking sheet and bake for 12–15 minutes until flakes easily.
- While baking, whisk together Greek yogurt, mayonnaise (if using), dill, lemon juice, lemon zest, Dijon mustard, and minced garlic in a bowl; season to taste.
- After baking, let cod rest briefly before serving with lemon-dill sauce drizzled on top or on the side.
