  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped walnuts
  • 1/4 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Mix in honey until well combined.
  3. In another bowl, whisk together flour, cinnamon, cardamom, and salt. Gradually add this mixture to the wet ingredients until just combined. Gently fold in chopped pistachios and walnuts.
  4. Roll dough into small balls, flatten slightly on the baking sheet, and bake for 10-12 minutes until golden around the edges.
  5. Let cookies cool on a wire rack before preparing the cream filling by beating cream cheese with powdered sugar until smooth.
  6. Once cooled, spread cream cheese filling on one side of each cookie and sandwich together. Drizzle with caramel sauce and garnish with extra nuts before serving.
