Ingredients
- 2 pounds ripe cherry tomatoes (halved)
- 4 tablespoons extra virgin olive oil
- 3–4 cloves garlic (minced)
- 2 tablespoons fresh thyme leaves (or 2 teaspoons dried thyme)
- 2 tablespoons balsamic vinegar
- 1 tablespoon granulated sugar
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- Rinse and dry the cherry tomatoes thoroughly, then cut each in half and place them on a baking sheet.
- Drizzle the olive oil and balsamic vinegar over the tomatoes. Add minced garlic, thyme, sugar, salt, and pepper; toss gently to coat.
- Arrange the tomatoes in a single layer on the baking sheet and roast for 30-40 minutes until they are wilted and the juices have thickened.
- Serve warm or let cool before storing in the fridge for later use.
