- 1/2 cup butter
- ¾ cup sugar
- ½ cup sour cream
- 1 egg
- 1 cup mashed ripe bananas (about 2)
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- For icing: ½ cup butter, 2 cups powdered sugar, 1 tsp vanilla extract, 1½ tbsp milk
Instructions
- Preheat the oven to 375°F. Line an 8×8 baking dish with parchment paper.
- In a large bowl, beat together sugar, sour cream, butter, and egg until creamy. Stir in mashed bananas and vanilla extract.
- Add flour, baking soda, and salt; mix until just combined.
- Spread batter in the prepared pan and bake for 20-25 minutes until golden brown.
- For the icing: Melt butter in a medium saucepan over medium-high heat until browned; pour into a bowl and whisk in powdered sugar and vanilla until smooth.
- Frost the warm bars with icing after allowing them to cool slightly.
