- 1 pound beef sirloin or flank steak, thinly sliced
- 1 package baby bok choy, ends trimmed and rinsed
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons vegetable oil
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon oyster sauce, optional
Instructions
- Gather all ingredients. Slice the beef thinly against the grain and separate the bok choy leaves.
- Heat a wok or large skillet over medium-high heat and add vegetable oil.
- Sear the sliced beef for about 2-3 minutes until browned; remove from pan to keep warm.
- In the same pan, sauté minced garlic and grated ginger for about 30 seconds until fragrant.
- Add bok choy, stirring frequently until wilted (about 3-4 minutes).
- Return beef to the pan, pour in soy sauce (and oyster sauce if using), and toss everything together until heated through (about 2 minutes).
