  • 1 tsp ground coriander
  • Salt and black pepper, to taste
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 (6 oz) can tomato paste
  • 1 cup beef broth

Instructions

  1. In a large pot or Dutch oven, sauté the chopped onion over medium heat until translucent. Add garlic and ginger, cooking until fragrant.
  2. Stir in curry powder, cumin, turmeric, cayenne pepper, smoked paprika, ground coriander, salt, and black pepper. Cook for a few minutes to enhance flavor.
  3. Brown the beef chunks on all sides in the pot.
  4. Pour in coconut milk, tomato paste, and beef broth; stir to combine and bring to a simmer.
  5. Cover and let simmer on low heat for about 2 hours until the beef is fork-tender.
  6. Adjust seasoning if needed before serving hot over rice or with naan.
