- 2 lbs beef chuck or stew meat, cut into 2-inch chunks
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tsp cayenne pepper (optional)
- 1 tsp smoked paprika
- 1 tsp ground coriander
- Salt and black pepper, to taste
- 1 (13.5 oz) can full-fat coconut milk
- 1 (6 oz) can tomato paste
- 1 cup beef broth
Instructions
- In a large pot or Dutch oven, sauté the chopped onion over medium heat until translucent. Add garlic and ginger, cooking until fragrant.
- Stir in curry powder, cumin, turmeric, cayenne pepper, smoked paprika, ground coriander, salt, and black pepper. Cook for a few minutes to enhance flavor.
- Brown the beef chunks on all sides in the pot.
- Pour in coconut milk, tomato paste, and beef broth; stir to combine and bring to a simmer.
- Cover and let simmer on low heat for about 2 hours until the beef is fork-tender.
- Adjust seasoning if needed before serving hot over rice or with naan.
