- 6 large bell peppers
- 1 pound ground beef or turkey
- 2 tablespoons taco seasoning
- ¾ cup canned black beans (rinsed and drained)
- ¾ cup sweet yellow corn (thawed)
- ½ to 1 cup reduced-fat shredded Mexican cheese blend
Instructions
- Preheat your oven to 375°F. Prepare a large baking sheet with nonstick oil or parchment paper.
- Cut each bell pepper in half lengthwise and then into thirds, creating chip-like pieces. Arrange them on the prepared baking sheet.
- In a skillet over medium heat, cook the ground beef or turkey until fully browned. Stir in taco seasoning and water; add black beans and corn, mixing until heated through.
- Spoon the meat mixture evenly over each bell pepper piece and sprinkle cheese on top.
- Bake for about 10 minutes until the cheese is melted. Serve warm with your choice of toppings.
