- 1 lb cooked, shredded chicken
- 1/2 red onion
- 1 avocado
- 5 tbsp cottage cheese
- 3 tbsp mayo
- Juice of 3 limes
- Large English cucumber
- 2 tbsp whipped cream cheese
- Everything bagel seasoning
- Chipotle hot sauce
Instructions
- In a mixing bowl, combine shredded chicken, finely chopped red onion, diced avocado, cottage cheese, mayo, lime juice, salt, and pepper. Mix until well combined.
- Slice the cucumber lengthwise into thin strips.
- Spread whipped cream cheese on each cucumber slice. Add chicken salad at one end and roll tightly.
- Serve topped with everything bagel seasoning and chipotle hot sauce if desired.
