- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/3 cup plain Greek yogurt
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- 1/4 cup granulated sugar (for the swirl)
- 1 1/2 tsp ground cinnamon (for the swirl)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
- In a separate bowl, cream together butter and sugar until fluffy. Beat in eggs one at a time, then mix in bananas, yogurt, and vanilla until smooth.
- Gradually add dry ingredients to wet ingredients until just combined.
- In another bowl, mix sugar and cinnamon for the swirl.
- Layer half the batter in the pan, sprinkle with half the cinnamon mixture and blueberries. Repeat with remaining batter and toppings.
- Use a knife to create swirls in the batter without fully blending.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool for about 10 minutes before transferring to a wire rack.
