  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/3 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar (for the swirl)
  • 1 1/2 tsp ground cinnamon (for the swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. In a separate bowl, cream together butter and sugar until fluffy. Beat in eggs one at a time, then mix in bananas, yogurt, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients until just combined.
  5. In another bowl, mix sugar and cinnamon for the swirl.
  6. Layer half the batter in the pan, sprinkle with half the cinnamon mixture and blueberries. Repeat with remaining batter and toppings.
  7. Use a knife to create swirls in the batter without fully blending.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool for about 10 minutes before transferring to a wire rack.
