  • 1 cup unsalted butter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 8 ounces cream cheese
  • 3 cups fresh blueberries
  • 2 large eggs
  • Zest and juice of one lemon

Instructions

  1. Preheat your oven to 350ºF (177ºC) and line an 8" x 8” baking pan with foil.
  2. In a mixing bowl, combine melted butter, flour, sugar, salt (if desired), and lemon zest; mix until blended.
  3. Press the mixture into the bottom of the prepared pan to form the crust.
  4. Beat softened cream cheese and sugar in another bowl until smooth; add eggs one at a time, mixing well after each addition.
  5. Stir in yogurt (or substitute), lemon juice, and zest until just combined.
  6. Gently fold in fresh blueberries without crushing them.
  7. Pour the filling over the crust and bake for 30-35 minutes until set but slightly jiggly in the center.
  8. Allow cooling completely before slicing into bars.
