Ingredients
- 1 cup unsalted butter
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 8 ounces cream cheese
- 3 cups fresh blueberries
- 2 large eggs
- Zest and juice of one lemon
Instructions
- Preheat your oven to 350ºF (177ºC) and line an 8" x 8” baking pan with foil.
- In a mixing bowl, combine melted butter, flour, sugar, salt (if desired), and lemon zest; mix until blended.
- Press the mixture into the bottom of the prepared pan to form the crust.
- Beat softened cream cheese and sugar in another bowl until smooth; add eggs one at a time, mixing well after each addition.
- Stir in yogurt (or substitute), lemon juice, and zest until just combined.
- Gently fold in fresh blueberries without crushing them.
- Pour the filling over the crust and bake for 30-35 minutes until set but slightly jiggly in the center.
- Allow cooling completely before slicing into bars.
