- 2 cups blueberries
- 2 1/2 cups sliced peaches (about 5–6 peaches)
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon vanilla extract
- 1/2 cup granulated sugar (divided)
- 3/4 cup all-purpose flour (divided)
- 1/2 cup old-fashioned oats
- 1/3 cup brown sugar
- 6 tablespoons cold butter (diced)
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F.
- In a large bowl, combine blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, and half of the granulated sugar (1/4 cup) with flour. Toss gently and let sit.
- In another bowl, mix the remaining flour (1/2 cup), oats, brown sugar, remaining granulated sugar (1/4 cup), salt, and cinnamon. Add cold butter and mix until crumbly.
- Transfer the fruit mixture into a baking dish and sprinkle the crumble topping evenly over it.
- Bake for 40 to 45 minutes until golden brown and bubbly.
