Ingredients
- 4 cod fillets (6 oz each)
- Salt and black pepper to taste
- 4 tablespoons butter
- 1 cup panko breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- Butter for greasing dish
Instructions
- Preheat your oven to 400°F and grease a baking dish with butter.
- Pat the cod fillets dry and season both sides with salt and pepper.
- Arrange the fillets in the baking dish with space between each piece.
- In a small saucepan over medium heat, melt the butter and mix in panko breadcrumbs, parsley, garlic powder, and lemon zest until combined.
- Evenly distribute the breadcrumb mixture over each fillet and drizzle with lemon juice and olive oil.
- Bake for 12-15 minutes until the fish flakes easily with a fork and the topping is golden brown.
- Allow to rest for 2 minutes before serving.
