- 2 large chicken breasts
- 1/2 teaspoon garlic powder
- Salt & pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 medium onion, chopped
- 3/4 cup chicken broth
- 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese, softened
- Optional: 1-2 tablespoons chopped parsley
Instructions
- Cut the chicken breasts in half lengthwise to create four thinner pieces. Season each piece with garlic powder, salt, and pepper.
- In a skillet over medium-high heat, add olive oil and butter. Once hot, cook the chicken for about 5-6 minutes per side until fully cooked. Transfer the chicken to a plate.
- In the same skillet, sauté the chopped onions for about 5 minutes until softened and lightly browned.
- Add chicken broth and softened Boursin cheese to the skillet. Stir until smooth and let bubble for approximately 5 minutes.
- Return the cooked chicken to the skillet and warm through until saucy and heated properly; adjust consistency with more broth if necessary.
- Season with additional salt and pepper as needed before serving.
