  • Yield: Approximately 2 servings (2 waffles) 1x

Ingredients

Scale
  • 1 heaping tablespoon sugar-free peanut butter
  • 1 large egg
  • 2 teaspoons cocoa powder
  • Pinch of salt
  • 12 teaspoons monkfruit sweetener (optional)
  • 1½ tablespoons sugar-free semi-sweet chocolate chips

Instructions

  1. In a mixing bowl, combine peanut butter, egg, cocoa powder, salt, monkfruit sweetener (if using), and 1 tablespoon of chocolate chips. Mix until well blended.
  2. If the mixture is too thick, gradually stir in 1-2 teaspoons of water until you reach a pourable consistency.
  3. Preheat your mini waffle maker according to the manufacturer's instructions.
  4. Pour half of the batter into the preheated waffle maker and sprinkle with half of the remaining chocolate chips. Close the lid and cook for 2-3 minutes or until no steam escapes.
