Ingredients
- 1 heaping tablespoon sugar-free peanut butter
- 1 large egg
- 2 teaspoons cocoa powder
- Pinch of salt
- 1–2 teaspoons monkfruit sweetener (optional)
- 1½ tablespoons sugar-free semi-sweet chocolate chips
Instructions
- In a mixing bowl, combine peanut butter, egg, cocoa powder, salt, monkfruit sweetener (if using), and 1 tablespoon of chocolate chips. Mix until well blended.
- If the mixture is too thick, gradually stir in 1-2 teaspoons of water until you reach a pourable consistency.
- Preheat your mini waffle maker according to the manufacturer's instructions.
- Pour half of the batter into the preheated waffle maker and sprinkle with half of the remaining chocolate chips. Close the lid and cook for 2-3 minutes or until no steam escapes.
- Carefully remove the waffle and repeat with the remaining batter.
