- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp unsalted butter
- 1 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp ground coriander
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1/2 tsp chili powder (adjust to taste)
- Fresh cilantro or crushed coriander seeds for garnish
Instructions
- Heat vegetable oil and butter in a heavy-bottomed pot over medium heat. Sauté the chopped onion until translucent.
- Add minced garlic and grated ginger; stir for about 2 minutes until fragrant.
- Incorporate spices: ground coriander, garam masala, turmeric, and chili powder. Cook for another minute.
- Add chicken pieces and stir until coated in the spice mixture; brown on all sides.
- Pour in enough water or broth to cover the chicken partially, bring to a gentle simmer, cover, and cook for 20-25 minutes until tender.
- Stir in crushed coriander seeds or cilantro leaves before serving with rice and naan.
