- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground nutmeg
- ½ cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup unsalted butter, melted
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and nutmeg.
- In another bowl, beat buttermilk, eggs, and vanilla extract. Gradually add melted butter while stirring.
- Pour the wet mixture into the dry ingredients and mix until just combined; avoid overmixing.
- Heat vegetable oil in a deep frying pot or Dutch oven to around 350°F (175°C).
- Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides (about 2–3 minutes).
- Remove with a slotted spoon and place on a cooling rack lined with paper towels.
- Dust with powdered sugar before serving.
