- 1/2 cup softened butter
- 1/3 cup granulated sugar
- 3/4 cup brown sugar
- 1 room temperature egg
- 2 teaspoons vanilla extract
- 1 ½ cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup softened butter for frosting
- 2 cups powdered sugar
- 1/4 cup butterscotch syrup
- 1/2 teaspoon vanilla extract for frosting
- 1–2 tablespoons heavy cream
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the egg and vanilla; mix until incorporated.
- In another bowl, combine flour, baking powder, and salt. Gradually mix into wet ingredients until just combined.
- Scoop dough into balls and flatten slightly on the prepared sheet.
- Bake for 12–13 minutes until edges are lightly golden; let cool on the sheet before transferring to a rack.
- For frosting, beat softened butter until smooth; gradually add powdered sugar, then mix in butterscotch syrup and vanilla until fluffy.
- Frost cooled cookies as desired.
