  • 12 oz smoked Beef sausage, sliced
  • 1 cup long-grain white rice, rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1.5 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers for about 5 minutes until softened. Add garlic and cook for an additional minute.
  2. Incorporate the sliced smoked Beef sausage into the skillet and cook for another 5 minutes until slightly browned.
  3. Stir in the rinsed rice along with Cajun seasoning, then pour in the chicken broth. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 15 minutes until rice is tender.
  5. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork. Adjust salt and pepper as needed.
