Ingredients
- 1 lbs boneless skinless chicken breasts, cut into bite-sized chunks
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 12 oz linguine pasta
- 2 tablespoons butter (for sauce)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup whole milk
- 6 oz Velveeta cheese, cubed
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook linguine according to package instructions until al dente. Reserve some pasta water before draining.
- In a skillet, heat olive oil and butter over medium-high heat. Sear chicken chunks seasoned with Cajun spices until golden brown and cooked through.
- In the same skillet, melt butter, add minced garlic, then pour in heavy cream and milk. Stir in Velveeta until melted.
- Combine mozzarella and Parmesan cheese into the sauce until creamy. Adjust consistency with reserved pasta water if needed.
- Toss drained linguine in the sauce before plating with the Cajun chicken bites on top.
