  • 12 oz linguine pasta
  • 2 tablespoons butter (for sauce)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook linguine according to package instructions until al dente. Reserve some pasta water before draining.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken chunks seasoned with Cajun spices until golden brown and cooked through.
  3. In the same skillet, melt butter, add minced garlic, then pour in heavy cream and milk. Stir in Velveeta until melted.
  4. Combine mozzarella and Parmesan cheese into the sauce until creamy. Adjust consistency with reserved pasta water if needed.
  5. Toss drained linguine in the sauce before plating with the Cajun chicken bites on top.
