Ingredients
- 1 lb boneless, skinless chicken breasts
- 12 oz linguine pasta
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 4 cloves garlic
- 2 tbsp olive oil
- 1 tsp Cajun seasoning
- Salt and freshly ground black pepper, to taste
Instructions
- 1. Bring a large pot of salted water to a boil and cook the linguine until al dente (9-10 minutes). Reserve ½ cup pasta water, then drain.
- 2. Season chicken with Cajun seasoning, salt, and pepper. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken for 7-8 minutes until golden brown; add half of the minced garlic during the last minute. Transfer to a bowl.
- 3. In the same skillet, lower the heat to medium and melt remaining butter. Sauté garlic until fragrant, then stir in heavy cream and let warm until bubbling.
- 4. Add mozzarella and Parmesan; stir until smooth. Adjust thickness with reserved pasta water if needed.
- 5. Toss cooked linguine in the sauce until coated, then serve topped with seared chicken and fresh parsley.
