  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese

  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • Salt and freshly ground black pepper, to taste

Instructions

  1. 1. Bring a large pot of salted water to a boil and cook the linguine until al dente (9-10 minutes). Reserve ½ cup pasta water, then drain.
  2. 2. Season chicken with Cajun seasoning, salt, and pepper. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken for 7-8 minutes until golden brown; add half of the minced garlic during the last minute. Transfer to a bowl.
  3. 3. In the same skillet, lower the heat to medium and melt remaining butter. Sauté garlic until fragrant, then stir in heavy cream and let warm until bubbling.
  4. 4. Add mozzarella and Parmesan; stir until smooth. Adjust thickness with reserved pasta water if needed.
  5. 5. Toss cooked linguine in the sauce until coated, then serve topped with seared chicken and fresh parsley.
