- 1.25 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning (plus extra to taste)
- 1 tsp garlic powder
- Salt & black pepper, to taste
- 12 oz twisted pasta (like rotini or fusilli)
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 oz cream cheese, for extra creaminess
- Chopped parsley, for garnish
Instructions
- Cook the twisted pasta in a large pot of salted boiling water until al dente. Drain and reserve some pasta water.
- Season chicken with Cajun seasoning and garlic powder. Cook in a skillet with olive oil until golden brown.
- In the same skillet, melt butter, sauté minced garlic, then add chicken broth and heavy cream.
- Stir in cream cheese, mozzarella, and Parmesan until melted into a smooth sauce.
- Combine cooked pasta and chicken with the sauce; simmer briefly to meld flavors.
- Garnish with chopped parsley before serving.
