Ingredients
- 1½ cups graham cracker crumbs
- ¼ cup brown sugar
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup sour cream
- 2 medium apples (Honeycrisp or Granny Smith), peeled & diced
- 2 tbsp butter
- 3 tbsp brown sugar
- ½ tsp cinnamon
- 1 tsp lemon juice
- ¼ cup flour
- 2 tbsp rolled oats
- 2 tbsp butter, melted
- Pinch of cinnamon
- ½ cup soft caramels or caramel sauce
- 2 tbsp heavy cream
Instructions
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs, brown sugar, melted butter in a bowl; press into a springform pan. Bake for 8–10 minutes and cool.
- Beat cream cheese and granulated sugar until smooth; add eggs one at a time, then vanilla and sour cream.
- Pour filling over the crust; bake for 30–35 minutes until set. Cool completely before refrigerating for at least 2 hours.
- Sauté diced apples with butter, brown sugar, cinnamon, and lemon juice until soft; cool.
- Layer apple topping over the cheesecake; prepare crumble topping with flour, brown sugar, oats, and butter; sprinkle over apples.
- Drizzle warm caramel sauce over the top before serving.
