  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • 2 medium apples (Honeycrisp or Granny Smith), peeled & diced
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • ¼ cup flour
  • 2 tbsp rolled oats
  • 2 tbsp butter, melted
  • Pinch of cinnamon
  • ½ cup soft caramels or caramel sauce
  • 2 tbsp heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs, brown sugar, melted butter in a bowl; press into a springform pan. Bake for 8–10 minutes and cool.
  3. Beat cream cheese and granulated sugar until smooth; add eggs one at a time, then vanilla and sour cream.
  4. Pour filling over the crust; bake for 30–35 minutes until set. Cool completely before refrigerating for at least 2 hours.
  5. Sauté diced apples with butter, brown sugar, cinnamon, and lemon juice until soft; cool.
  6. Layer apple topping over the cheesecake; prepare crumble topping with flour, brown sugar, oats, and butter; sprinkle over apples.
  7. Drizzle warm caramel sauce over the top before serving.
