Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss diced butternut squash with olive oil, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes until tender.
  3. In a skillet over medium heat, caramelize sliced onions in olive oil for about 20 minutes until golden brown.
  4. Roll out the puff pastry on a floured surface to fit your tart pan and prick the bottom to prevent bubbling.
  5. Spread caramelized onions over the pastry base, layer with roasted squash pieces, crumble cheese on top, drizzle with cream and sprinkle thyme.
