Instructions
- In a large bowl, mix lump crab meat, cheddar cheese, crushed biscuit mix, mayonnaise, egg, Dijon mustard, Old Bay seasoning, and parsley until just combined.
- Shape the mixture into six patties (about 1-inch thick) and refrigerate for 15-20 minutes.
- Heat olive oil in a skillet over medium heat. Fry the crab cakes for 3-4 minutes per side until golden brown.
- Serve hot with lemon wedges or your preferred dipping sauce.
