Ingredients
- 1 head of cauliflower
- 2 tablespoons butter
- 1 small onion, diced
- 2 tablespoons plain flour
- 1 cup milk
- 6 ounces cheddar cheese, shredded (divided)
- Black pepper
- Ground nutmeg
Instructions
- Preheat the oven to 350°F (175°C).
- Boil salted water in a large pot and cook the cauliflower for about 5 minutes until slightly tender. Drain and set aside.
- In a saucepan, melt butter over medium heat. Sauté the diced onion until translucent. Stir in flour and whisk for one minute.
- Gradually add milk while whisking until thickened (about 5–7 minutes). Remove from heat and mix in half of the cheddar cheese; season with black pepper and nutmeg.
- In a baking dish, place the cooked cauliflower, pour the cheese sauce over it, sprinkle remaining cheese on top, and bake for 20–25 minutes until bubbly and golden brown.
