  • 6 ounces cheddar cheese, shredded (divided)

  2. Boil salted water in a large pot and cook the cauliflower for about 5 minutes until slightly tender. Drain and set aside.

  4. Gradually add milk while whisking until thickened (about 5–7 minutes). Remove from heat and mix in half of the cheddar cheese; season with black pepper and nutmeg.
