Ingredients
- 1 lbs boneless, skinless chicken breasts, cut into thick bite-sized pieces
- 1 tbsp olive oil
- 4 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 tsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- 12 oz rotini pasta
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 cup cubed Velveeta cheese, for sauce
- 1 cup shredded mozzarella cheese, for melting over chicken
- 1 cup shredded mozzarella cheese, for sauce
- 1 cup grated Parmesan cheese
- 2 oz cream cheese, softened
- 1 tsp Italian seasoning
- Chopped parsley or dried herbs, for garnish
Instructions
- Cook rotini in salted boiling water until al dente; drain and set aside.
- Season chicken with Cajun seasoning, smoked paprika, salt, and pepper.
- Sear chicken in olive oil and butter until golden-brown; add garlic, then melt mozzarella on top.
- Make sauce by simmering heavy cream and broth; whisk in cream cheese, then add remaining cheeses until melted.
- Toss cooked rotini into the sauce; serve chicken alongside garnished with herbs.
