  • 1 cup cubed Velveeta cheese, for sauce
  • 1 cup shredded mozzarella cheese, for melting over chicken
  • 1 cup shredded mozzarella cheese, for sauce
  • 1 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

Instructions

  1. Cook rotini in salted boiling water until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper.
  3. Sear chicken in olive oil and butter until golden-brown; add garlic, then melt mozzarella on top.
  4. Make sauce by simmering heavy cream and broth; whisk in cream cheese, then add remaining cheeses until melted.
