  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese, optional

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. Cut chicken breasts in half horizontally, pound for even thickness, then marinate in olive oil, garlic, Italian seasoning, salt, and pepper for at least 15 minutes.
  3. Sauté spinach in remaining olive oil until wilted. In a bowl, mix cream cheese with sautéed spinach and half of the mozzarella.
