Ingredients
- 2 slices of sourdough or artisan bread
- 1/2 ripe avocado, mashed
- 1 tsp lemon juice
- Salt and pepper to taste
- 1/2 cup cooked shredded chicken (grilled or rotisserie)
- 2 slices of cheddar or Monterey Jack cheese
- 1 tbsp mayonnaise or aioli (optional)
- 1 tbsp butter (for toasting)
- Optional add-ins: sliced tomato, red onion
Instructions
- In a small bowl, mash the avocado with lemon juice, salt, and pepper until creamy.
- Spread mayonnaise on one side of each slice of bread. On one slice's opposite side, layer with the avocado mixture. Add shredded chicken followed by cheese. Top with the second slice of bread, mayo side facing out.
- Heat butter in a skillet over medium heat. Grill the assembled sandwich for 3–4 minutes on each side while pressing down gently with a spatula until golden brown and cheese melts.
- Remove from heat, slice in half, and serve hot.
