- 2 boneless skinless chicken breasts
- 1 avocado, sliced
- 4 slices of Swiss, cheddar, or provolone cheese
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- 4 slices of sourdough or ciabatta bread
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Season the chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook for 6–7 minutes on each side until fully cooked. Let rest before slicing.
- Slice the avocado and prepare your cheese.
- Spread mayonnaise and Dijon mustard on one side of each slice of bread.
- Layer two slices of bread (mayo side up) with sliced chicken, avocado, cheese, red onion, and tomato. Top with remaining slices (mayo side down).
- Grill in the skillet over medium heat with butter or olive oil for 3–4 minutes per side until golden brown and cheese is melted.
- Serve warm after letting cool slightly.
