  • 2 boneless skinless chicken breasts
  • 1 avocado, sliced
  • 4 slices of Swiss, cheddar, or provolone cheese
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • 4 slices of sourdough or ciabatta bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook for 6–7 minutes on each side until fully cooked. Let rest before slicing.
  2. Slice the avocado and prepare your cheese.
  3. Spread mayonnaise and Dijon mustard on one side of each slice of bread.
  4. Layer two slices of bread (mayo side up) with sliced chicken, avocado, cheese, red onion, and tomato. Top with remaining slices (mayo side down).
  5. Grill in the skillet over medium heat with butter or olive oil for 3–4 minutes per side until golden brown and cheese is melted.
  6. Serve warm after letting cool slightly.
