- 12 large eggs
- 1/2 cup milk (skim or your choice)
- 3/4 cup shredded cheddar cheese (divided)
- 8 ounces cooked chicken (cubed)
- 2 green onions (sliced thin)
- Salt
- Black pepper
- Garlic powder
Instructions
- Preheat the oven to 350°F (175°C). Spray a muffin tin with cooking spray.
- In a mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
- Stir in 1/2 cup of shredded cheddar cheese, cubed chicken, and green onions.
- Fill each muffin cup with the egg mixture and top with the remaining cheese.
- Bake for 25 to 30 minutes until set and edges pull away from the sides.
- Allow to cool before storing in airtight containers.
