Ingredients
- 1 can chickpeas (15-ounce), drained and rinsed
- 1 avocado, pitted and diced
- 4 ounces feta cheese, crumbled
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine chickpeas, avocado, feta cheese, red onion, parsley, and mint. Gently mix.
- In a small bowl or jar, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper until well combined.
- Pour dressing over the salad ingredients and gently toss to coat.
- Serve immediately or chill in the refrigerator before serving for enhanced flavors.
