- 1 cup all-purpose flour
- ¼ cup cocoa powder
- ½ cup olive oil
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 eggs (room temperature)
- ½ cup sour cream
- 1 cup ripe bananas (mashed)
- ½ cup dark chocolate chips
- ½ cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing it lightly with olive oil or lining it with parchment paper.
- In one bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.
- In another bowl, mix the olive oil, brown sugar, and granulated sugar until combined. Add eggs one at a time followed by vanilla extract, sour cream, and mashed bananas. Stir until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined. Gently add the chocolate chips.
- Pour half of the batter into the prepared loaf pan. Arrange banana slices on top before adding the remaining batter.
- Bake for approximately 55 minutes or until a toothpick inserted comes out clean.
