  • ¼ teaspoon salt
  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together room-temperature butter and granulated sugar until fluffy. Add vanilla and egg, mixing well.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually combine with the wet ingredients until fully incorporated.
  4. Drop dough onto the prepared baking sheet about 2 inches apart. Bake for 10 minutes until edges are set; let cool.
  5. For the mint frosting, beat powdered sugar, room-temperature butter, milk, mint extract, and optional food coloring until smooth. Spread over cooled cookies.
  6. For the ganache, melt chocolate chips with oil in short bursts in the microwave until smooth; drizzle or spread over frosted cookies.
