  • 100 grams powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup butter
  • 1/3 cup peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a double boiler, combine egg whites and granulated sugar, whisking until frothy.
  3. Whip the mixture to stiff peaks using a stand mixer.
  4. Sift together almond flour, cocoa powder, and powdered sugar; fold into the meringue gently.
  5. Pipe circles onto prepared sheets and bake for 13 minutes.
  6. While baking, prepare the peanut butter filling by mixing butter, peanut butter, powdered sugar, vanilla extract, and salt until fluffy.
