Ingredients
- 3 cups Rice Krispies cereal
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter
- 1 cup mini vegan marshmallows
- 1 cup chocolate chips
Instructions
- In a medium saucepan over low heat, melt the unsalted butter and mini vegan marshmallows until smooth.
- Remove from heat and stir in the creamy peanut butter until well combined.
- In a large bowl, pour in the Rice Krispies cereal and gently fold in the peanut butter mixture until evenly coated.
- Line a muffin tin with paper liners. Spoon the mixture into each cup, pressing down gently for an even surface.
- Melt the chocolate chips in a microwave-safe bowl using 20-second intervals until smooth. Spoon melted chocolate over each cup and spread evenly.
- Let cool at room temperature or refrigerate until set before serving.
