Ingredients
- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 cup melted dark chocolate, cooled
- 1 cup fresh strawberries, pureed
- ¼ cup granulated sugar (for strawberry swirl)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Combine chocolate cookie crumbs, melted butter, and sugar in a mixing bowl. Press mixture into the bottom of a springform pan and bake for 10 minutes. Allow to cool.
- Beat cream cheese until smooth; gradually add sugar and mix in eggs one at a time. Add sour cream and vanilla extract, followed by cooled melted chocolate.
- In another bowl, mix strawberry puree with sugar and lemon juice until smooth.
- Pour chocolate filling over crust and swirl dollops of strawberry puree on top using a knife or skewer.
- Bake for 50-60 minutes until edges are set but center is slightly jiggly. Turn off the oven and let cool inside for an hour.
- Chill in the refrigerator for at least 4 hours or overnight before serving.
