- 4 small ripe bananas
- ⅔ cup brown sugar
- 1 cup thickened cream (or heavy cream)
- 1 cup milk (or plant-based milk)
- 10g glucose syrup (or corn syrup)
- ¼ teaspoon vanilla extract
- ½ cup semi-sweet chocolate
- 2½ teaspoons refined coconut oil
- 1 cup walnut pieces
Instructions
- Melt semi-sweet chocolate with coconut oil until smooth; pour into a lined container to set.
- Slice bananas and sauté until golden brown; add brown sugar to caramelize and cool.
- Heat milk, cream, and glucose syrup until just simmering; blend with caramelized bananas until smooth. Chill mixture.
- Churn the chilled mixture in an ice cream machine until thickened.
- Fold in chocolate chunks and walnuts; transfer to a freezer-safe container and freeze until firm.
