  • 1 can cream of chicken soup (low-sodium or homemade)
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt to taste
  • black pepper to taste
  • 1/4 cup chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Transfer the mixture into a greased casserole dish and spread evenly. Top with shredded cheese and half of the French fried onions.
  4. Bake for 35 minutes until bubbly and golden on top. In the last few minutes of baking, sprinkle remaining French fried onions for extra crunch.
