Ingredients
- 3 cups cooked white rice (or brown rice)
- 2 cups shredded cooked chicken (or turkey)
- 1 can cream of chicken soup (low-sodium or homemade)
- 1 can French onion soup
- 1 cup sour cream (or dairy-free yogurt)
- 1 cup shredded cheese (mozzarella or Swiss)
- 1 cup French fried onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt to taste
- black pepper to taste
- 1/4 cup chopped parsley (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Transfer the mixture into a greased casserole dish and spread evenly. Top with shredded cheese and half of the French fried onions.
- Bake for 35 minutes until bubbly and golden on top. In the last few minutes of baking, sprinkle remaining French fried onions for extra crunch.
- Let cool slightly before garnishing with chopped parsley and serving warm.
