Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup chopped spinach
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- 1/4 cup cooked chicken, diced (optional)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a muffin tin with nonstick spray.
- In a blender, combine eggs, cottage cheese, garlic powder, onion powder, salt, and black pepper; blend until smooth.
- In a mixing bowl, stir in the shredded cheddar cheese, diced bell peppers, chopped spinach, and optional cooked chicken.
- Pour the mixture evenly into muffin cups, filling each about 3/4 full.
- Bake for 20–25 minutes until set and lightly golden.
- Cool for five minutes before removing from the tin.
