  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1/4 cup cooked chicken, diced (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a muffin tin with nonstick spray.
  2. In a blender, combine eggs, cottage cheese, garlic powder, onion powder, salt, and black pepper; blend until smooth.
  3. In a mixing bowl, stir in the shredded cheddar cheese, diced bell peppers, chopped spinach, and optional cooked chicken.
  4. Pour the mixture evenly into muffin cups, filling each about 3/4 full.
  5. Bake for 20–25 minutes until set and lightly golden.
  6. Cool for five minutes before removing from the tin.
