- 1 teaspoon olive oil (optional)
- ½ teaspoon garlic powder or Italian seasoning (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper and lightly grease it.
- Blend the cottage cheese until smooth using a food processor or blender.
- In a mixing bowl, whisk together the eggs and blended cottage cheese. Add olive oil (if using), oat flour, baking powder, salt, and any optional seasonings. Mix until well combined.
- Divide the dough into 2-3 portions and roll each into thin oval shapes on a floured surface.
- Transfer the flatbreads to the prepared baking sheet and bake for 15-18 minutes until golden brown around the edges.
- Let cool briefly before serving warm.
