Instructions

- Pour in vegetable broth and add thyme. Bring to a boil, then reduce heat and let simmer for 15 minutes.
- Use an immersion blender to achieve your desired consistency—smooth or chunky.
- Stir in cottage cheese until well combined.
- Season with salt and pepper to taste and garnish with fresh parsley before serving.
