  • 2 large ripe bananas, mashed
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar (for filling)
  • Additional cinnamon-sugar mix for swirling

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the ripe bananas and mix in melted butter, brown sugar, eggs, and vanilla until smooth.
  3. In another bowl, combine flour, baking soda, salt, and ground cinnamon.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. For the cream cheese filling, beat together softened cream cheese, granulated sugar, one egg, and vanilla extract until smooth.
  6. Layer half of the banana batter in the greased pan followed by half of the cinnamon-sugar mix and spread cream cheese filling on top. Finish with remaining banana batter and sprinkle with remaining cinnamon-sugar before swirling gently.
  7. Bake for 50 to 60 minutes or until a toothpick comes out clean (a bit of cream cheese is fine).
  8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
