Ingredients
- 2 large ripe bananas, mashed
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 8 oz cream cheese, softened
- ¼ cup granulated sugar (for filling)
- Additional cinnamon-sugar mix for swirling
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mash the ripe bananas and mix in melted butter, brown sugar, eggs, and vanilla until smooth.
- In another bowl, combine flour, baking soda, salt, and ground cinnamon.
- Gradually add dry ingredients to the wet mixture until just combined.
- For the cream cheese filling, beat together softened cream cheese, granulated sugar, one egg, and vanilla extract until smooth.
- Layer half of the banana batter in the greased pan followed by half of the cinnamon-sugar mix and spread cream cheese filling on top. Finish with remaining banana batter and sprinkle with remaining cinnamon-sugar before swirling gently.
- Bake for 50 to 60 minutes or until a toothpick comes out clean (a bit of cream cheese is fine).
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
