- 1.5 lbs boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 2 cups chicken broth
- 1 lb cheese tortellini
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup heavy cream
- Chopped chives (optional)
Instructions
- Season the chicken with olive oil, Cajun seasoning, and smoked paprika.
- In a large skillet over medium-high heat, sear the chicken until cooked through, about 6-8 minutes. Remove from the skillet.
- Melt butter in the same skillet and sauté minced garlic for about a minute.
- Whisk in flour to create a roux; cook for 1-2 minutes.
- Gradually whisk in milk and chicken broth until smooth; bring to a simmer.
- Stir in salt and pepper, then cook until thickened (5-7 minutes).
- Cook tortellini according to package instructions; drain.
- Add cheeses and heavy cream to the sauce until melted.
- Combine cooked tortellini and chicken with the sauce; serve immediately.
